When I started this blog I wanted to post at least once a week, however now it seems it takes forever to write. I am so over worked, no one to complain, took all by myself. But then again these are all the things I love. I have been meaning to post a recipe for the longest time. Now i realized as tomorrow is the Bangla new year, nothing is a better time to post one. I am not doing it today, thus posting a picture from my archive.

On this ocassion I would like to post one of my favourite and easiest vegetable recipe. I have made this many times and everytime I recieved overwhelming response. I once watched a recipe show on tv, I dont remember the name of the show, the channel or the presenter, I just remember the alluring mouth watering Okra fries. I could manage just to see a quick recap and I did it on the following day. It became an instant hit and a regular item in my household. All you need is 250g of lady finger / Okra, 30g flour, some sunflower oil to fry and Aamchur or mango powder. But for my twist keep some lemon wedges handy.

Take the lady fingers, wash them thoroughly and pat dry, cut lenthwise in 4 pieces. You will get 4 long strips of lady fingers from each. Cut all that you have. Mix the flour roughly with the lady fingers. You do not need to cover them just roughly mix it. Set aside.

In a fry pan, on medium heat put oil and wait till it is absolutely hot. Slowly fry the vegetable, don’t put all at once, fry it in 4 steps. Fry it well till it is crispy. You will see the the seeds popping at this point. Make it brown, golden brown and put on a kitchen tissue to soak the extra oil.

Now you can either sprinkle the aamchur as in the mango powder or you can take a different route. Drizzle little lemon juice and sprinkle some salt, or sprinkle some black salt. No matter what you use, it tastes so good.

করকরে ভিন্ডি ভাজি

২৫০ গ্রাম ভিন্ডি ভাল করে ধুয়ে হালকা মুছে নিয়ে লম্বা করে ৪ ভাগ করে নিতে হবে। ভিন্ডির গা যেন শুকনা না হয়। এরপর ময়দা ছিটিয়ে দিয়ে মাখিয়ে নিন। আলতো করে মাখাতে হবে। ৪ ভাগে ধীরে ধীরে গরম তেলে করকরে করে ভেজে তুলবেন। আমচুর দিয়ে ছিটিয়ে গরম পরিবেশন করবেন। বা লেবুর রস দিয়ে লবন ছিটিয়ে দিতে পারেন। বিট লবণ দিয়ে খেলেও অনেক ভাল লাগে।
